Chocolate Almond Slice

This Chocolate Almond Slice is based on an American Brownie I used to make.  The Brownie was very rich in butter but for the slice I use neither butter nor oil.  The result is a soft textured slice, more like a cake.  Sometimes it seems to rise more than other times but whether it is shallower or deeper, it gets eaten just as quick!

If you like a hazelnut flavour, I have also made this slice using ½ cup of ground almonds and ½ cup of ground hazelnuts instead of the 1 cup of ground almonds.

For a finished look, I usually dust the slice with icing sugar before serving.

Ingredients:

  • 4 eggs
  • ¾ cup sugar
  • 1 teaspoon vanilla
  • 1 cup ground almonds
  • ¼ cup cocoa
  • 1 teaspoon baking powder

Method:

Pre-heat the oven to 180° C.

Line a 30cm x 20cm slice tin with baking paper.

Lightly whisk the eggs.  They don’t need to be over-beaten.  I usually just use a hand whisk to do this.

Add the sugar and vanilla and whisk lightly.

Add the ground almonds, cocoa and baking powder, and mix to combine.  The mixture is very runny.

Pour the mixture into the prepared tin.

Bake for 30 minutes.  Test with a skewer before removing from the oven.

If desired, sprinkle with icing sugar to serve.

    Made this slice this a.m. & Nev & I had two pieces each for afernoon tea. Sprinkled with icing sugar as you do, delicious!! I am cutting your cooking times down for approximately 7–10 minutes on the recipes so far & working out perfect.
